I didn't use cinnamon and I substituted plain 0% Greek yogurt (Fage) for the buttermilk. I followed the recipe for the most part, but I used twice the amount of the bananas. Otherwise, it was yummy and we ate the whole thing. WAY too sweet!! I love chocolate and have a very sweet tooth, but I would halve the streusel recipe next time. Yes, some of us think we're so smart until we realize how dumb we are. HOWEVER, when you double the recipe and make it in a bundt pan, you need to put the streusel on the BOTTOM of the pan before pouring in the batter. I used coconut milk with a squeeze of lemon instead of buttermilk because I had none. I also added about 1/3 cup of frozen cranberries and cut the sugar in the banana cake in half. I didn't use chocolate and cut the streusel in half as per other reviewers. I look forward to trying them, especially us7ng a bundt pan to bake it. When I couldn't find my dog-eared copy, I decided to check on-line and found all these great reviews of the recipe with great ideas for changes. It's great-full of banana and chocolate goodness. I have been making this recipe e as my go-to recipe using ripe bananas since it came out in 2003. I layered the streusel using the whole portion, giving it a bit of crunch and texture inside. Took the advice of others, doubled the batter and baked it in a Bundt pan. But I do understand why some might add less chocolate. The amount of chocolate is a bit over the top, but in a good way. Moist, with a lovely streusel, and the flavor had just the right amount of banana flavor. I followed the recipe exactly and the coffee cake was just perfect. It was good, but it didn't "wow" me like it did many reviewers. Husband didn't like the chocolate chips in it. Only changes I made: baked in springform pan, substituted full fat greek yogurt with a little milk for buttermilk. The streusel (? - I thought streusels usually contain butter and flour?) gets a little crunchy. This was pretty good for as easy as it was. I think 2 bananas is plenty because the flavor is still very banana-y and the texture and moisture is perfect! I only had a 9x9 pan instead of 8x8, so it only needed to bake for about 30 mins at 350☏ instead of 45. With only a few minor modifications, it was perfect! I used only 2 ripe bananas instead of 3, and I halved the amount of streusel per the recommendations of others. ![]()
